Local Recipes - Mayor Joe's Christmas Raisin Spice Cake

Grease & flour 13x9 pan 1 Duncan Hines Spice Cake Mix 1 cup water 1/3 cup unsweetened applesauce 3 eggs (I use Egg Beaters) 1/2 tsp. each: cinnamon, nutmeg, cloves Mix well. Add 3/4 cups raisins, 1/2 cup chopped nuts (optional) Sprinkle with powdered sugar when cool or CREAM CHEESE ICING: Cream together: 1/2 stick of butter 1 - 8 oz. pkg. cream cheese, softened 1 tsp. vanilla extract. Gradually beat 1 box (or less) of confectioner’s sugar into butter mixture. Continue to beat icing til glossy. Frost cake and garnish. Marzipan Decoration: 1/2 lb. marzipan red & green food coloring superfine sugar Color marzipan with food coloring Roll out on sugar dusted board until 3/4” thick Cut shapes of holly leaves and berries.
