    Contributed by Evelyn Nazzarro, Harriman Village Clerk 1 3/4 lb. cream cheese (3 1/2 large pkgs.) 1 1/4 cup sugar 3 eggs separated 2 tbls. flour 1 cup sour cream 3/4 tsp. salt 1 1/2 tsp. vanilla or 2 tbls. lemon juice CRUST; 1 pkg. crushed graham crackers, mix with 4 tbls. melted butter and press into pan bottom and up part of the sides of a 9” spring form pan. METHODS; Beat cheese, egg yolks, flour, sugar, salt until creamed well and blended. Beat egg whites til stiff but not dry. Set aside. Add flavor to creamed mixture then fold in egg whites. Bake 1 hour at 325 degree oven. Cool in oven. Do not remove too soon.
